Meal Plan Monday-Superfoods Edition

I’m admittedly late in creating this post because yesterday was the last day of Cancer Prevention Month but awareness is important at all times of the year.  I was approached to write an article about this topic and was at first uncertain of how I would make this work for me, my blog, and my readers.

Living a healthier lifestyle is one of the ways to help prevent cancer.  Total prevention is not possible because cancer is evil and strikes without prejudice, but taking care of yourself certainly doesn’t hurt in the fight.  I’m not an expert on cancer but it’s safe to say I know cancer.

I know how it feels when someone you love tells you they have cancer.  I know how it feels to live with the fact that I could one day have cancer.  I know how it feels to lose someone to cancer.  It’s my personal connection to cancer that made me want to explore the topic of prevention and something I will continue to explore from time to time in future posts.

When I received the information I was inspired by the information above because I realized the three points listed above are items I’m working on in my own life.  Eating healthy, working out, and enjoying time outside are things I try to do everyday in my pursuit of a healthier lifestyle (even as I sit here eating Hot Tamales, appropriately portioned so I don’t eat the whole box, lol).

The word superfoods stood out to me because it’s a term I’ve heard but don’t know very much about and since I love research I thought I would look into superfoods.  The definition from Google is “a nutrient-rich food considered to be especially beneficial for health and well-being.”

My original plan was to research how each of the superfoods work throwing out information on vitamins, how the foods affect the body, all the diseases they help prevent but I’m not writing a research paper I’m writing a blog.  I wanted to find a way to share information in my own way.  There’s tons of information on the subject and I would encourage looking into it because it’s pretty impressive how certain foods really work to help keep you healthy.  My plan to introduce this topic into my blog is to incorporate the superfoods into my meal plans.

Here’s a few superfoods:  Broccoli, Berries, Beans, Salmon, Garlic, Walnuts, Carrots, Spinach, Kale, whole grains, green tea, and Tomatoes.  There’s tons more but in my quick research these were the few I was seeing consistently plus these were some I knew I could incorporate into my easy meal plans 😀

M:  Quesadilla with chicken, cheese, and spinach

T:  Out for dinner

W:  Whole wheat spaghetti with chicken and broccoli

T:  Tofu veggie stir fry

F:  Salmon with green beans and cauliflower mash

S:  Pinto Bean Soup (Recipe TBD)

S:  Probably leftover soup 🙂

My inspiration for this post was from the Mesothelioma and Asbestos Awareness Center.  Check out their page and their blog for more information.

Hope everyone is having a good week!  Today was a rough day but we’re one day closer to Friday and it’s Trivia Night!  Yay!  I’m going to throw on my thinking cat and head out!   XD  thinking-cap-no-wait-hat

Crushed it!

The good news this morning is I’m not nearly as sore as I thought I would be after walking about 8 miles yesterday.  My obsessive competitive side kicked into overdrive yesterday afternoon.

My goal for this week has been to hit 10,000 steps every day.  Yesterday I hit that goal a little bit after I got off work so it made me wonder, “How many more steps can I get in today?”  I was shooting for 5 miles but some extra stepping while making dinner and cleaning plus an extra long phone call with my mom had me doubling my goal.  I paced back and forth during the call and racked up almost 2 miles!

I don’t think I’ll catch up to the first or second place person in the challenge unless they just stop moving but I might be able to squeak my way into 3rd place.

I’m already planning a walk for this afternoon.  I can take either a 30 minute or 1 hour lunch so I figure if I’ve got the time I might as well take advantage to get some extra steps during the work day.  I’ll be working out of the office for part of the day and there’s a walking path around a little lake just a short drive from where I’ll be working.

In addition to all the walking I’m also getting on track with my eating.

I mentioned my banana and peanut butter roll ups yesterday.  This morning I made one again and thought I would share some pictures.

I decided to give this peanut butter from Trader Joes a try and I like it, just have to watch for chia seeds in my teeth 😀  I don’t always eat before I leave the house because it’s so early so this is a great breakfast to take with me.

For lunch today it’s a wrap with turkey and fresh avocado!  (I know, I’m a bit wrap obsessed right now ) I almost didn’t grab anything else but finally stopped myself from being lazy and sliced up an apple.  I would rather have too much food with me because I can always leave something for the next day versus if I don’t have enough food because then I get hungry and will be more likely to eat junk food.

I just need to keep this momentum going.  You might see more short posts from me during the day because writing helps with my motivation.

Hope the week is treating you well!  We’re almost to the weekend!!

A bit of randomness for a Thursday.  I was going to post a gif or pic about it almost being the weekend then I came across this and it made me laugh so hopefully it makes you laugh too 😀  Happy T-Rex Thursday! (That’s a thing, right? 😉 )

A Midday Post

Just a quick midday update…I’m not feeling great today but I’m in this workweek hustle challenge on Fitbit and it’s making me super motivated. On Monday my Fitbit lost its mind and missed almost all my steps so I have a whole day to make up.

It’s an office day for me so not very much walking but I did take myself on a walk around outside the office. It’s not a great area (it’s a little sketchy) so I might be exploring other lunchtime walking options. I’m also making myself drink more water. Office days can be boring and I find myself craving something to munch on but I’m resisting the urge to snack the day away.

I’m going to enjoy my cinnamon apples and wrap with turkey and spinach then it’s back to work. I also found my new favorite snack/breakfast this morning: a whole wheat tortilla with peanut butter and banana. Yum! Rolled up then sliced into little portions, so delicious!

Happy Wednesday! We’re once again almost at the end of the week, inching closer to the weekend!! 😊
