Meal Plan Monday

I’m back with my meal plans again 🙂

It’s been a rough couple weeks.  James the cat was sick.  I was sick.  Thanksgiving was the worst.  Taking care of both him and myself I found meal plans slipping by the wayside, but honestly my appetite was gone.  I was living on mostly broth and saltine crackers, except on Thanksgiving when I made myself a little meal.

After James passed away I continued with the whole not eating thing, or basically eating the least amount of food possible to keep myself moving.  Fortunately, this didn’t last for long and so now I’m trying to get back (once again) into regular eating habits.  I’m also trying to keep myself moving, which helps with the grief.

The first night I came home from work after he passed away I lost it the moment I walked in the door.  Actually, I went to the gym then went to Target then almost had a meltdown in Target when the thought crossed my mind, “I need to get home and feed the cat”.  When I realized there was no reason to rush home I decided I just didn’t want to go home.

This routine continued through most of last week.  I learned being home was the hardest because it reminded me that he’s not here.  I don’t think a day has gone by that I haven’t cried because I miss him but I am doing better.

This weekend was amazing!  It was the perfect distraction.  As mentioned in my last post I did my first and second 5K this weekend but I’ll save those for a separate post this week.

Onto the meal plans!

This week I am doing a clean out the cupboard week where I don’t buy groceries or only buy a small amount.  The list I put together the only thing I’ll need to buy is a can of tomatoes, an onion, and lemon juice, so it’ll be a less than $5 shopping trip.

As always, my meal plan is simple!  Simple is good!  When I mention that I meal plan I see the look on people’s faces so I’m quick to assure them it’s nothing complicated.  I’m not planning out elaborate recipes for every night of the week (Kudos to those that do!) or doing tons of prep (Again, Kudos!) but I found a system that works for me.

This week I am venturing into trying a new recipe just based on what I have on hand plus my tiny list, and I’m very excited to taste how it turns out.

Monday:  Pasta with sausage and broccoli
Tuesday:  Out for trivia
Wednesday:  Rice with chicken and stir fry veggies
Thursday:  Middle eastern chickpea stew
Friday:  Surprise Meal!

Surprise meal on Friday because I have a Costco trip planned that day so I think I’ll treat myself to something yummy.  Hope December is treating everyone well.  I was so ready for November to be over 🙂  Happy Monday and Have a great week!

    Oeh, that Middle Eastern Chickpea stew looks tasty!!! Wonder what the suprise meal is going to be!
