Meal Plan Monday

I skipped the gym today.  I feel kind of bad about it and am sitting here knowing I probably would’ve felt better if I’d gone because today was a frustrating day.  I think I needed the release that the gym provides but instead I sit here writing and trying to plan everything going on in the next few weekends.

I did rationalize it by saying it would give me time to do my meal plans so at least some good has come out of my not going to the gym…and I plan to go the rest of the week.

I have a 10K coming up on Sunday.  It’s my first so I’m nervous, trying to balance not doing too much before it and not doing absolutely nothing.  I’m thinking hit the gym Tuesday-Friday then do a light walk on Saturday then spend the day stretching, icing, and mentally preparing myself to walk 6.2 miles!

I’m excited and nervous.

I didn’t make a lunch today so I ended up at the Vietnamese place across the street enjoying one of their delicious sandwiches.  I swear I could eat one every day but I can’t afford it so I need to pack my lunch the rest of the week.

I discovered Tikka Masala sauce through a random giveaway and I loved it, so when I saw these packages at Costco I decided to give it a try.  tikka_masala-350x393

It makes me wish I had a microwave so I didn’t have to heat it up on the stove top but it takes like 5 minutes instead of 1 minute so I can’t complain too much.  Last time I just mixed up the package with some brown rice and it was very tasty so tonight I’m going to add in some chicken.

Lunch is mostly leftovers with the exception of Wednesday.

I am pulling out one old recipe for this week on Thursday because someone at work brought in a dish that reminded me of it and I remembered really enjoying it, Braised coconut and spinach chickpeas with lemon.  Yum!

Dinner: Chicken with vegetable Tikka Masala and rice

Lunch: Leftovers
Dinner:  Out

Lunch:  Chicken Pita with cucumbers and hummus
Dinner:  Chicken pasta

Lunch:  Leftovers
Dinner:  Braised coconut spinach and chickpeas with lemon

Lunch:  Leftovers
Dinner: Spaghetti

I’m off to continue making dinner and prepping for the rest of the week.  Monday was not the best day so here’s to Tuesday being a better day!

I’m an Auntie!!

Exciting news in my world this week was my brother and his wife having their first baby!!

When I received the first picture of my new little nephew I leapt for joy and exclaimed “It’s a baby!!!”  Thankfully I was with a coworker who knew what was going on but I would’ve had the same reaction if I was alone.

I can’t wait to completely spoil the little bundle of cuteness.

Seeing the pictures made me want to jump on a plane right away but I’ll be there next month 🙂  Congrats again to the happy couple!  Hopefully you’re getting some sleep!  Can’t wait to see everyone next month!

In the meantime, I’m watching Auntie Mame to better understand how to be a good auntie.  Don’t worry….I’ll wait a few years before I start gifting swords 😉

Hello :)

I did my first 5K of the year last weekend and I was pretty happy with my time.

I came in at 50:19.  My last 5K in December was 55:23  so I’ve definitely made some improvements in my time and my goal for the first half of this year is to be able to do a 15:00 mile.

I’m putting in plenty of miles each days but I’m struggling to find balance right now.  It’s sometimes difficult to know the difference between pushing yourself to do more and pushing yourself too much.  I only made it to the gym 3 days this week but I did hit my 11,000 step goal every day of the week.

cheering_minionsHave I mentioned how much having support helps?  It’s been amazing to find coworkers and friends who are also interested in getting healthy.

I have people to walk with, people who encourage me to go to the gym, people who find runs for us to participate in, people who encourage bringing lunches instead of eating out, etc, etc.

They encourage me to get moving on days when I feel more Carrie than Charlotte or Miranda….

It makes a HUGE difference.  Even though they might never see this post I’ll say thank you to them anyways because their support is amazing!

In other news….

I didn’t win the Biggest Loser challenge at work

Actually I wasn’t too heart broken.  I knew I hadn’t lost much weight.

The woman who won is one of my walking buddies but she walks about 5 miles more per week than I do…she’s a machine.  Some people were surprised because walking is all she does for exercise but she’s also doing the whole 30 right now and I think people forget how much food plays a role in weight loss.

Speaking of food….I did both good and bad this week but I know I need to get back to meal prepping.  Going to the gym for at least an hour every night means I might not get home until 6:30, and I’m typically exhausted so trying to think of what I want to make for dinner takes too much effort.

Thankfully I have tons of healthy food on hand but I’ll gravitate to the easiest option.  One night it was chips and hummus….not exactly a complete meal.  I will have meal plans up this week.  I’m not allowed to spend any money this week so I’ll be working with whatever I have on hand but the truth is I have tons of food on hand and there is no need for me to grocery shop this week.

My feet and legs are aching so I’m going to have a no working out day.  I plan to go to the gym tomorrow for a little bit in the morning or if it’s not pouring down rain maybe walk over to see a movie.

I’m going to maybe soak my feet for a bit, put on some fluffy socks, and kick back to catch up on movies or binge watch a TV show….or nap all day 😉  We’ll see how it goes, basically the plan is recuperation.
